If you are visiting Fes for tourism, I highly recommend staying within the old medina or at its entrance. This will guarantee the most authentic experience. Everything is then accessible by foot within reasonable walking distance. No cars are allowed within the media of Fes el-Bali, considered to be the largest pedestrian area in the world.
While in Fes, we stayed at Riad Maison Bleue & Spa and I could not recommend it highly enough.
